Tony's Pimento Cheese recipe

Ingredients:

8oz Pimentos
8oz Extra Sharp Yellow Cheddar Cheese
8oz Extra Sharp White Cheddar Cheese
2/3 cup of Mayonnaise
1 Tsp Fresh Cracked Black Pepper
1 Tsp Cayenne Pepper
2 Tsp Fresh Cracked Kosher Salt

Tools:

Cheese grater
Spatula
Large mixing bowl
Sealable container

Instructions:

Grate both blocks of cheese into large mixing bowl.
Add Salt, Black and Cayenne Peppers to taste.
Fold 10-15 times, until spices are integrated with cheese.
Chop, drain and add Pimentos, again folding 10-15 times to integrate with cheese.
Add Mayonnaise and fold, until combined thoroughly, with Pimentos evenly distributed.
Move mixture to container, cover with plastic wrap and container lid.

Refrigerate at least 2 hours, for flavors to mature. Overnight is best.

Spread on your favorite bread, crackers or use as a sandwich compliment. Most importantly, enjoy and share the recipe with friends and family!

P.S. - My favorite way to enjoy this delicious treat is on a wheat bread square, cut diagonally, spread about 1/4" thick, with a glass of milk.
